THE HACHI SHOCHU, Sweet Potato (Imo), Cask Matured is a collaboration with Ookubo Shuzo, a family owned farm distillery in Kagoshima and Hacchan who, somewhere along the way was also exposed to Whisky and the benefits of Cask Maturation. Made from Kogane Sengan, a fluffy delicious variety of sweet potato with a lovely aroma and golden skin colour, Shiro (White) Koji and single distilled under normal atmospheric pressure (making it a Honkaku Shochu) to retain the flavors of the underlying ingredient, this Batch 3 has been matured for about 4 years and 4 months in an ex-Brandy Cask to retain the flavour of the origin spirit while adding an extra dimension of complexity to the nose.
Color: Deep Gold Nose: Sweet caramel, butterscotch, fruit cake along with some cherries, raisins along with oak spices in the back. Palate: An initial sweetness of candied orange, hints of caramel and toffee balanced with oak spices, a hint of oak and again peach and lychee from the sweet potato shochu coming through at the back.
Recommended way to Drink: Straight Up, On the Rocks or as a Highball (3 parts of sparkling water to 1 part The Hachi Shochu).

THE HACHI SHOCHU, Barley (Mugi), Cask Matured is a collaboration with Miroku Shuzo, a family owned craft distillery in Oita, Japan and Hacchan who, somewhere along the way was also exposed to Whisky and the benefits of Cask Maturation. Made from local barley grown in Kitsuki and Usa (both near the distillery in Oita) and single distilled under normal atmospheric pressure (making it a Honkaku Shochu) to retain the flavors of the underlying ingredient, this Batch 2 is matured for about 3 years in a Refill ex- Rum Casks to add layers of complexity and flavour to the original spirit. Color: Light Straw Gold Nose: A complex and balanced mix of sweet barley (mugi) with a hint of figs, raisins, plums and some coconut milk candy with oak spices. Palate: Sweet start which evolves very quickly into salted caramel with some salty undertones some dark chocolate oak spices and a dry but lingering finish.
Recommended way to Drink: Straight Up, On the Rocks or as a Highball (3 parts of sparkling water to 1 part The Hachi Shochu).

Suntory Roku Japanese Craft Gin is a meticulously crafted gin distilled in Japan that highlights six unique Japanese botanicals: sakura flower, sakura leaf, yuzu peel, sencha tea, gyokuro tea, and sansho pepper. These botanicals are harvested at their peak freshness, following the Japanese concept of “shun,” to capture the essence of Japan’s four seasons in each bottle.
In addition to these six distinctive botanicals, Roku Gin also contains eight traditional gin botanicals such as juniper berries, coriander, angelica root, cardamom, cinnamon, bitter orange peel, lemon peel, and angelica seed, which together create a complex yet balanced flavor profile. The gin is distilled using various pot stills to preserve the individual essence of each botanical, resulting in a smooth, multi-layered gin with floral, citrus, and spicy notes.
Roku Gin has an ABV of 43% and is known for its clean, crisp taste with a top note of yuzu, a subtle spiciness from sansho pepper, and delicate floral hints from cherry blossom and green teas. THE HACHI SHOCHU, Rice (KOME KASU), Cask Matured is a collaboration with Nakamoto Sake Brewery Co.,Ltd, located in Nara, Japan and with a history dating back to 1727. Traditionally producing Junmai, Junmai Ginjo and Junmai Daiginjo the fermentation rice mash that remains after after the Sake has been pressed out from the Moromi is called Kome Kasu aka Sake Kasu. A usual by-product of the Sake brewing process with an ABV of about 8-13% the Kasu is then single distilled (making it a Honkaku Shochu) under vacuum pressure to retain the flavours of the underlying ingredient KOME (Rice) and then matured for about 8 years in a Refill Virgin Oak Cask to add layers of complexity to the original spirit. Come and enjoy this special bottling with Hacchan.
Color: Very Light Straw/Pale Yellow. Nose: A sweet aroma of freshly cooked Japanese rice, mochi cream, fresh green apple, tropical fruits such as melon, guava, banana with undertones of honeycomb and grapefruit. Palate: Initial sweetness, fresh vanilla, honey reminding us of the oak maturation balanced with fresh apricots, sour plums and dark chocolate to finish. Reminiscent of a fruity and dry sake. The flavours of KOME (Rice) are very much present along with the additional layers of flavours from cask maturation.

KOMASA GIN-Sakurajima Komikan is a very enjoyable and broadly approachable gin produced by Komasa Jyozo, which has over 130 years of experience making shochu in Kagoshima. KOMASA GIN is based on minimalization of additional elements and focuses on the major botanical i.e. the Sakurajima komikan. The world's smallest mikan, or satsuma mandarin, is an important crop on Mt. Sakurajima as it is unsuitable for rice production due to its volcanic ash soil. With a diameter of only 4-5cm and a weight of 20-50g, the size of this mikan is small but its presence is immense.
Tasting Note: The crisp, dry taste of gin and the gentle citrus aroma of mikan combine for an entirely unique drinking experience.

THE HACHI SHOCHU, Kome (Rice), Cask Matured is a collaboration with Fukano Shuzo, which was founded in 1823 by Tokiji Fukano and is located at Hitoyoshi city in Kumamoto. This Kome Shochu comprises a vatting of about 75% of Kome Shochu A, a traditional unmatured Kome Shochu and 25% of Kome Shochu B, cask matured (for about 3.5 years in an Ex-Bourbon Cask) to create a perfect balance between the traditional KUMA Shochu with a hint of additional layers of complexity from the cask maturation. The unmatured traditional Kome Shochu A has been produced using premium Japanese rice (with a polishing ratio of about 90%), Shiro Koji (White Koji) and Sake Ginjo Yeast at low-temperature fermentation followed by single distillation under vacuum pressure to retain the flavours of the underlying ingredient Kome (Rice). The cask matured component has been produced with Ki Koji (Yellow Koji), Sake Ginjo Yeast and vacuum distillation. Come and enjoy this special bottling with Hacchan. Kanpai!
