"SADO - THE HARMONY" The final bottling of Kilchoman Single Cask Whisky in the SADO series by Mizunara captures the harmony and mutual respect between the Host (Cask 767/2011 Bottling) and the Guest (Cask129/2013 Bottling) in the Japanese Tea Ceremony, which is embodied in Mizunara's philosophy. The Label is a combination of both the earlier bottlings in the SADO Series.
This Single Cask Whisky has been matured exclusively for 8 years in a Bourbon Cask.
Nose: Floral sweetness, lemon, vanilla and soft peak smoke. Palate: Lemon and citrus, butterscotch sweetness and hint of saltiness on the back. Finish: Long and clean with waves of citrus fruits and maritime peat smoke.

This scotch whisky named after an inlet on Islay’s rugged Atlantic coast, Sanaig is a vatting of both sherry and bourbon casks. The high proportion of Oloroso sherry influence adding a balance of dried fruits and spices to classic Kilchoman citrus sweetness and peat smoke character.
Predominantly Sherry Cask matured, Sanaig was awarded the BEST Single Malt Scotch Whisky -NAS at IWSC 2016 and 2022. It snagged a Gold metal Award on the 2024 and 2022 International Spirits Challenge and Spirits Business Awards 2024 Master. .
Nose: Fragrant heather, raisins, pear and orange peel with waves of stoned fruits, mixed spices and rich peat smoke. Palate: Over ripe plums, red cherries and hints of citrus give way to rich barbeque peat smoke, toffee, oak and dark chocolate. The 2020 limited release uses a combination of Optic/Publican barley grown in the fields next to the Kilchoman Distillery in Rockside on Islay in 2007, 2009 and 2010. This unique Single Farm Single Malt is the only whisky in Scotland to be produced entirely on one farm, from barley to bottle. The barley was then malted onsite and peated using local Islay peat before being distilled, matured and eventually bottled all within the farm distillery’s premises. Matured for a minimum of 9 years, this vatting of 39 bourbon barrels and 2 oloroso sherry casks delivers an intense combination of floral sweetness, layers of rich fruity character and soft maritime peat smoke. Limited to 12,400 bottles.

A limited release for 2022, the Kilchoman Casado (Portuguese for marriage) is matured in fresh bourbon barrels for 6 years before 38 casks were married together for 2 years in two 6,000 litre Portuguese red wine vats.
Nose: Smoke comes first and balanced with ripe stone fruits: peach, plum and cherry. Palate: Pepper and spice at first taste. Dry, salty peat smoke with apricot and lemon. Finish: Long finish with spices, the cooked fruit notes bring a sweet-jam balanced with Kilchoman smoke.

Following on the hugely popular Fino 1st release in 2020, this is the 2nd Fino Release of Kilchoman. From a total of 20 select Fino Sherry Butts, the Sherry butts were selected from Bodega Jose y Miguel Martin (Spain).
The Fino Sherry maturation works incredibly well with our classic Kilchoman character. The 2023 release elevates the fragrant green apple, stewed fruits and sweet citrus while allowing for the unmistakea- ble Kilchoman peat smoke to linger on the palate. Fino is another example of sherry casks working together, not against, our Kilchoman spirit. Limited to 15,650 bottles worldwide.
Nose: Elegant, dry peat smoke on the initial nosing, gradually opens to the unmistakable fruity character of Kilchoman. The distinct influence from the Fino Sherry casks provides dry, smoked oak which balances with the smoke found in the heavily peated Kilchoman malt. A lasting aroma of sweet butterscotch as the whisky begins to open. Palate: Honeycomb sweetness can be found immediately on the palate, gradually giving way to rich toffee and caramel. The Kilchoman spirit brings together candied fruits and the fresh citrus found in the distillation. Flaked almonds and a delicate peat smoke remain throughout. Finish: Long-lasting considered finish combining the malty spirit of Kilchoman, with the ripened citrus fruit profile provided by the Fino Sherry casks. A subtle peat smoke which has coated the palate right through now shares the finish with hints of dark chocolate. (Tasting Notes from Distillery)
