Valdespino Fino Inocente Single Vineyard Sherry is a traditional, dry Fino sherry made exclusively from Palomino grapes grown in the high-altitude Macharnudo Alto vineyard in Jerez, Spain. It is unique as it is the only Fino fermented in 600-liter American oak barrels using indigenous yeasts, a rare practice that adds complexity and richness to the wine. The solera system used for aging involves ten criaderas (stages), with the average age of the wine being around ten years under a protective veil of flor yeast.
The wine is pale golden in color with a complex aroma profile featuring notes of almonds, yeasty brioche, dried hay, salted olives, chalk, and hints of vanilla. The palate is elegant, full-bodied yet delicate, with mineral, zesty citrus, apple, grapefruit, and herbal flavors balanced by a fine chalky texture and a salty, slightly bitter finish. This Fino combines freshness and richness well, presenting a refined and long-lasting finish.
It is best served chilled (8-9°C) and pairs excellently with salted almonds, white fish, light meats, and tapas. This sherry has received high praise and awards, recognized for its balance, complexity, and traditional production methods that preserve the authentic character of Fino sherry.
