The 100% Islay 11th Edition was distilled from 2007, 2009, 2010 and 2011 barley (Optic & Publican) harvests before being matured in 26 bourbon barrels and 7 oloroso sherry butts for a minimum of 9 years. This unique Single Farm Single Malt is the only whisky in Scotland to be produced entirely on one farm, from barley to bottle. The barley was then malted onsite and peated using local Islay peat before being distilled, matured and eventually bottled all within the farm distillery’s premises. Limited to 12,000 bottles.
Awarded 95 Points at IWSC 2022 (Gold Medal Winner).

A limited release for 2022, the Kilchoman Casado (Portuguese for marriage) is matured in fresh bourbon barrels for 6 years before 38 casks were married together for 2 years in two 6,000 litre Portuguese red wine vats.
Nose: Smoke comes first and balanced with ripe stone fruits: peach, plum and cherry. Palate: Pepper and spice at first taste. Dry, salty peat smoke with apricot and lemon. Finish: Long finish with spices, the cooked fruit notes bring a sweet-jam balanced with Kilchoman smoke.

Nose: fresh and floral with plenty of coastal influence. Seaside freshness gives way to tropical fruit, light citrus and malty sweetness. Palate: juicy tropical fruit and earthy peat smoke combined with spices, lemon zest and a creamy, malty sweetness. Finish: long and bold with gentle peat smoke, cashews and almonds with the dry saline influence of the fino coming forward. 10,500 bottles released worldwide with limited availability in Hong Kong. Not often you come across a fino matured whisky.

We would highly recommend to add water to see how this whisky evolves beautifully with enhanced citrus and sweet mandarin notes combined with some baked tarts balanced with some minerality and saltiness. A very enjoyable whisky indeed.

This Hibiki Blender's Choice released around September 2018, soon after the Hibiki 17 was discontinued, this is rumoured to/believed to be the "replacement". The Sauternes Cask Matured 2024 Edition, the third limited release of this cask type was bottled at the end of May 2024. It’s been fully aged in ex-Sauternes wine casks for over 5 years and comes in at 50% ABV. To get just the right balance between the Sauternes cask influence and that classic Kilchoman character, founder and master blender Anthony Wills went with a good mix of second-fill Sauternes casks. He picked 22% first-fill and 78% second-fill casks from 2017 and 2018. Fun fact: most of the second-fill casks used were finishing casks from the 2018 release, resulting in a tasty blend of buttery sweetness, barbecued pineapple, candied ginger, and floral peat smoke.
Nose: Creamy, buttery notes with ripe fruits, a hint of salty sea air and subtle peat smoke. Palate: Butterscotch and floral notes combine with tropical and candied fruits with integrated peat smoke flowing throughout. Madeira is a fortified wine available in a range of dry to sweet styles. A full Madeira cask maturation is quite rare and brings a rich fruity character balanced with the citrus and floral creaminess of the Kilchoman distillate. Distilled in May 2016, matured for over 5+ years in 46 fresh Madeira hogsheads, before being bottled at 50% ABV in August 2021. While originally planned for release in late 2021, a bottle shortage resulted in a delayed release/shipment to Hong Kong.( Officially released in March 2022 in the UK)
Nose: Caramel, Orange peel, Ripe plums and Rich smoke. Palate: Bright citrus zest, peach, Dark chocolate with ripe fruits. Finish: Juicy fruits, some burnt sugar with smoke.

Launched in December 2019, this is the first release from the Asaka Distillery which is owned by Sasanokawa Shuzo. Established in 2015 with the first distillation in 2016, the Asaka Distillery sits on the site where several casks of Hanyu were temporarily stored by Ichiro Akuto san (with the help of Sasanokawa Shuzo at the start of Ichiro san's famous whisky journey).
Reportedly matured in first fill bourbon casks, only 1500 bottles were released. Vanilla sweetness and refreshing citrus notes on the nose/palate reflecting the bourbon cask maturation with a long lingering finish showcasing the distillery's new make spirit. While a very collectible bottle, it is a great dram to be shared with "friends and family" indeed.
