Stone fruit i.e., peach, salty and umami come through. It changes in the middle to more tropical fruity like banana. Hint of chocolate bitter at the finishing. Using Sake yeast and white koji for the fermentation. Under the low temperature, it enhances the aroma of the Shochu.
