Distilled in the Winter of 1983 (most likely in the first few months of 1983 before the Port Ellen Distillery closed permanently in May 1983) at Port Ellen and matured in a Sherry Butt for 25 Years, this rare single malt was bottled by Douglas McGibbon & Co in Autumn in 2008. "On the nose, this Port Ellen is oceanic with seaweed, iodine and a character of fresh leather. The palate opens with rich smoke and creasote and develops sweetness with burnt caramel. The finish remains sweet with bonfire ashes and cloves" - Bottler Tasting Notes.

This Islay single malt from Port Ellen distillery is an independent bottle from The McGibbon's Provenance range, distilled in Spring of 1983, matured in single sherry butt #2102 and bottled in Summer of 2005. "A marriage of the sea and fruitiness on the nose, enjoy its saline and marine quality alongside the nuances of its Sherry Cask heritage. On the palate, an initially dry fore-taste runs to pepperiness, softened by the characteristics of the cask. The finish is long, warming, smokey plus the archetypal old leather from Port Ellen which runs on and on, tinged late by sea-weed and iodine. (Tasting Notes from the Bottler). This is a single cask and bottled at natural cask strength, exclusive to John Milroy. Light golden color with an elegant long lingering aroma of peat and smoke. Fills the palate with an exquisite coating of tarry seaweed infused with sublime smokey peat and a long nutty fruit finish. Enhanced by the addition of a little water.

Sharp and elegant taste with a gentle gin jo aroma. Lacking any distinct quirks thanks to being vacuum distilled, it is perfect match to Japanese cuisine. Stone fruit i.e., peach, salty and umami come through. It changes in the middle to more tropical fruity like banana. Hint of chocolate bitter at the finishing. Using Sake yeast and white koji for the fermentation. Under the low temperature, it enhances the aroma of the Shochu.
