THE HACHI SHOCHU, Sweet Potato (Imo), Mizunara Cask Matured is a collaboration with Ookubo Shuzo, a family owned farm distillery in Kagoshima and Hacchan who, somewhere along the way was also exposed to Whisky and the benefits of Cask Maturation. Made from Grilled Kogane Sengan and Anno Imo, a fluffy delicious variety of sweet potato with a lovely aroma and golden skin colour (Yaki Imo), Kuro (Black) Koji and single distilled under normal atmospheric pressure (making it a Honkaku Shochu) to retain the flavors of the underlying ingredient, this Batch 5 has been matured for about 2 year and 7 months in Mizunara Oak to retain the flavour of the origin spirit while adding an extra dimension of complexity to  the nose, palate and finish. 

Mizunara Oak is unique to Japan and is infamously difficult to work with, given their grain structure which also makes it more prone to leakages but imparts very unique flavours that are not usually found in traditional bourbon and sherry barrels.

Color: Deep Gold Nose: Tropical fruits, incense, sandalwood, cedar and coconut with some subtle smoke balanced with sweet potato in the backgroud. Palate: Grated dry coconut, some banana and pineapple with a hint of oak spices, incense and sandalwood along with sweet potato flavours coming through at the back combined with subtle smoke.

Recommended way to Drink: Straight Up, On the Rocks or as a Highball (3 parts of sparkling water to 1 part The Hachi Shochu).

"SADO - THE HARMONY" The final bottling of Kilchoman Single Cask Whisky in the SADO series by Mizunara captures the harmony and mutual respect between the Host (Cask 767/2011 Bottling) and the Guest (Cask129/2013 Bottling) in the Japanese Tea Ceremony, which is embodied in Mizunara's philosophy. The Label is a combination of both the earlier bottlings in the SADO Series.

This Single Cask Whisky has been matured exclusively for 8 years in a Bourbon Cask.  

Nose: Floral sweetness, lemon, vanilla and soft peak smoke. Palate: Lemon and citrus, butterscotch sweetness and hint of saltiness on the back. Finish: Long and clean with waves of citrus fruits and maritime peat smoke.

Distilled in 2007 and bottled in 2023. Cask No. 11064. Limited to 217 bottles worldwide. Aroma: Sponge Cask, vanilla and buttery, Citrus Peels, caramel and toffee. Taste: Candied sweetness, Some nuttiness followed by salted caramel and spices. Finish: Long with warm spices like cloves and cinnamon.

We would highly recommend to add water to see how this whisky evolves beautifully with enhanced citrus and sweet mandarin notes combined with some baked tarts balanced with some minerality and saltiness. A very enjoyable whisky indeed.

Kanosuke Owners Club is the Kanosuke Distillery's Cask Ownership Program. This non-peated whisky was distilled on 18th June 2020 and aged in a French Oak sherry cask for three years at a natural cask strength of 63% before bottling in 28th July 2023 for MIZUNARA.

This bottling is from an old presentation of The Balvenie 21 Year Old and matured in two casks - Traditional Oak Casks and then finished for a few months in Port Casks. This is a special Non - Chill Filtered Release during the time of malt master David Stewart bottled at an ABV of 40%. This bottle has been signed by David Stewart on the front label (see second label image for reference) 

This masterpiece is characterized by fruit, honey and spice notes, with a gentle nutty finish (Tasting Notes from Producer).

The Balvenie Founder’s Reserve is a classic 10 year old Single Malt Scotch whisky which was created by The Balvenie Malt Master, David Stewart, from a marriage of bourbon and sherry casks. Originally launched since the early 1980s, the Founder’s Reserve is now discontinued. Various editions of this bottling were released, including some iconic releases such as the first editions that resembled a cognac bottle. Founder’s Reserve was discontinued in 2009 and replaced by the then current range of bottlings, which was more focused on finishes and original casks, like the Caribbean Rum Cask finish, 12 Year Signature Reserve etc..

On the nose, The Balvenie Founder’s Reserve is rich and complex with honey and orange notes and just a hint of peat. Its taste is full-bodied honeyed sweetness, with light spicy notes and a hint of sherry fruitiness. Its finish is long with a pleasant lingering richness (Distillery Tasting Notes).

Now a rare find.

A 2003 Vintage Single Cask #5553 special bottling from the GlenDronach distillery, matured for 11 years in an Oloroso Sherry Puncheon Cask for Whisky Live Tokyo 2015 and bottled as non chill filtered and natural color at an impressive 57.7% ABV.

Nose: golden syrup with a hint of cinnamon and toasted oak develops to apricots with a touch of vanilla. Appearance: Bright antique gold. Palate: Richly stewed orchard fruits and vanilla with a touch of white pepper. Boiled sweets and gentle liquorice notes appears in the long finish. (Producer's Tasting notes).

Sun-ripened fruits combine with the sea breeze and soft white smoke. Palate: A thick flavor develops with smoky and mineral notes. Finish: A rich oily taste lingers long.
