The Sauternes Cask Matured 2024 Edition, the third limited release of this cask type was bottled at the end of May 2024. It’s been fully aged in ex-Sauternes wine casks for over 5 years and comes in at 50% ABV. To get just the right balance between the Sauternes cask influence and that classic Kilchoman character, founder and master blender Anthony Wills went with a good mix of second-fill Sauternes casks. He picked 22% first-fill and 78% second-fill casks from 2017 and 2018. Fun fact: most of the second-fill casks used were finishing casks from the 2018 release, resulting in a tasty blend of buttery sweetness, barbecued pineapple, candied ginger, and floral peat smoke.
Nose: Creamy, buttery notes with ripe fruits, a hint of salty sea air and subtle peat smoke. Palate: Butterscotch and floral notes combine with tropical and candied fruits with integrated peat smoke flowing throughout. "SADO - THE HARMONY" The final bottling of Kilchoman Single Cask Whisky in the SADO series by Mizunara captures the harmony and mutual respect between the Host (Cask 767/2011 Bottling) and the Guest (Cask129/2013 Bottling) in the Japanese Tea Ceremony, which is embodied in Mizunara's philosophy. The Label is a combination of both the earlier bottlings in the SADO Series.
This Single Cask Whisky has been matured exclusively for 8 years in a Bourbon Cask.
Nose: Floral sweetness, lemon, vanilla and soft peak smoke. Palate: Lemon and citrus, butterscotch sweetness and hint of saltiness on the back. Finish: Long and clean with waves of citrus fruits and maritime peat smoke.

This is a Limited Edition of Machir Bay bottled at Cask Strength of 58.3% ABV using the same vatting recipe as the traditional Machir Bay bottling to appreciate the full power and character of Kilchoman's core range.
Nose: Opens with light, fruity notes influenced by our distillation. Being cask strngth, allows for intense waves of fresh green apple followed by candied tropical fruits. Lasting hints of dry, earthy peat smoke become the backbone for this release. Palate: Noticeably power at cask strength allowing for a concentrated palate combining citrus notes of lemon and orange peel. As the whisky opens it reveals a dominant honeycomb-sweetness that makes way for a profile driven by milk chocolate, provided by a Bourbon-rich maturation. Finish: A slight cracking black pepper spice combined with nutmeg. The oily, rich texture of this whisky delivers an increasingly smoky influence. This is the 12th Edition of the 100% Islay release and distilled from 2011 - 2013 barley harvests (from the fields next to the distillery) and then matured in Bourbon Barrels and Oloroso Sherry butts for at least 8 years. This is a vatting of 29 Bourbon Barrels & 6 Oloroso Sherry Butts with 12,500 bottles being released. Nose: Elegant, sweet peat smoke, citrus and honey, vanilla and salted caramel. Palate: Green fruits, apple, pear. Light spice, raisin and toffee. Finish: Peat smoke returns and remains on the palate, oily, creamy balanced with toffee and caramelised sugar.
The 100% Islay release is usually peated at 20 ppm with the entire production "from Barley to Bottle" taking place at the distillery on Islay itself (which is quite unique).

Sado - the Japanese Tea ceremony captures a variety of elements of Japanese hospitality such as mutual respect, harmony and tranquility. The label has been designed by Artist Kenro Shinchi of Koshikishima island in Kagoshima, Japan to capture the art of Sado. Nose: Mixed fruits, liquorice, citrus and sweet smoke Palate: Orange, spice and christmas cake, with warmest peat smoke and dark chocolate Finish: long with lingering sweet smoke and cooked fruits. The sixth official release from Kilchoman (i.e. one of the earlier bottlings) is a vatting of three year old and four year old whisky from first fill and refill bourbon casks with the four year old finished in sherry casks for about a month. Lots of smoke, iodine, and salty notes with hints of oloroso in the background. A great bottling to taste a Kilchoman from its early days.

The First Cognac Matured release of Kilchoman. Distilled in 2016 and released in 2023. 32 casks were chosen and aged for a minimum of 6 years. The Cognac casks were sourced from Tonellerie Bossuet (France).
Nose: An opening note of rich apple and pear forms the structure for this release. Herbaceous fresh fruit begins to make its way as the whisky begins to open. Subtle tones of honey and warming spice develop over time. Peat remains delicate on the nose, bringing a dryness to this release. Palate: The texture provided by a slow distillation and the influence of the Cognac oak allows for a buttery texture which continues throughout. Dried lemon and apricot combine with cinnamon and nutmeg which are held together by an influence of toasted oak and sweet peat smoke. Finish: The depth of flavour that the Cognac casks have provided the Kilchoman spirit is unrivalled; dried fruits and marzipan make way to crystallised ginger, balancing sweet and spice. The 2020 limited release uses a combination of Optic/Publican barley grown in the fields next to the Kilchoman Distillery in Rockside on Islay in 2007, 2009 and 2010. This unique Single Farm Single Malt is the only whisky in Scotland to be produced entirely on one farm, from barley to bottle. The barley was then malted onsite and peated using local Islay peat before being distilled, matured and eventually bottled all within the farm distillery’s premises. Matured for a minimum of 9 years, this vatting of 39 bourbon barrels and 2 oloroso sherry casks delivers an intense combination of floral sweetness, layers of rich fruity character and soft maritime peat smoke. Limited to 12,400 bottles.

"Sado - The Guest". This is a Single Cask (#129/2013) bottling exclusively for Mizunara, Hong Kong. Bottled in November 2020 with 254 bottles released, this has been matured in a fresh bourbon barrel for nearly seven years and then finished in a Pedro Ximenez hogshead for over ten months. A Nose of citrus fruits and raisins and a Palate of mixed fruits, salted caramel and dry spice with peat smoke at the back end, the Finish is long with rich fruits, lots of spices like cloves and cardamom along with dry smoke.
This bottling represents a continuation of the story of SADO, from Mizunara's previous Single Cask bottling (767/2011 label focusing on the HOST) and this time around focuses on the GUEST, both of whom share mutual respect during a Japanese Tea Ceremony ("SADO"). The label for both the bottles were designed by Kenro Shinchi, an artist based out of Koshikishima Island in Kagoshima, Japan.

Tasting Note: Nose: Full-bodied with a strong cask influence after 18 years, offering rich butterscotch, vanilla, and caramel, along with hints of toasted oak. Palate: Robust, with sweet caramel and toffee fruits, balanced by a touch of peat smoke and subtle saltiness in the background. Tasting Note: Nose: Soft and full-bodied with rich caramel and toffee, complemented by hints of lemon zest and subtle peat smoke. Palate: Lush and smooth, with sweet toffee and vanilla, followed by lemon curd notes and a light, integrated peat smoke. A limited release for 2022, the Kilchoman Casado (Portuguese for marriage) is matured in fresh bourbon barrels for 6 years before 38 casks were married together for 2 years in two 6,000 litre Portuguese red wine vats.
Nose: Smoke comes first and balanced with ripe stone fruits: peach, plum and cherry. Palate: Pepper and spice at first taste. Dry, salty peat smoke with apricot and lemon. Finish: Long finish with spices, the cooked fruit notes bring a sweet-jam balanced with Kilchoman smoke.
