Kilchoman Islay Scotch Whisky
Kilchoman Distillery was established in 2005, they are the first distillery to be built on Islay, Scotland in over 124 years. The distillery was founded in 2005 by Anthony Wills and is Islay’s farm distillery, producing Single Farm Single Malt Whisky. Kilchoman is one of the few whisky distilleries in Scotland to remain independent.
Terroir means the complete natural environment in which a particular wine is produced, If we are to consider the concept of it in the context of Whisky, then perhaps Kilchoman’s 100% Islay range would possibly qualify as an Islay single malt, produced completely on site, matured and bottled at site...from barley to bottle.

Loch Gorm 2022 Edition was matured in oloroso sherry butts previously used by Bodega José y Miguel Martín for a minimum of 8 years. The 22 casks selected are a combination of 20 fresh and 2 refill casks. The sherry soaked oak adds layers of rich fruity character which balance beautifully with the classic Kilchoman peat smoke and citrus flavours.

The sixth official release from Kilchoman (i.e. one of the earlier bottlings) is a vatting of three year old and four year old whisky from first fill and refill bourbon casks with the four year old finished in sherry casks for about a month. Lots of smoke, iodine, and salty notes with hints of oloroso in the background. A great bottling to taste a Kilchoman from its early days.

A vatting of two 11 years old casks at cask strength – one bourbon barrel and one oloroso sherry butt. The Feis Bottling will only be available from the distillery. Mild smoky, raisins, dried figs and dates aroma. Sweet and fruity on palate like raspberry drops, currant, strawberry. Medium to long, lightly dry, creamy and spicy until the end. Limited to 939 bottles worldwide.

This is a Limited Edition of Machir Bay bottled at Cask Strength of 58.3% ABV using the same vatting recipe as the traditional Machir Bay bottling to appreciate the full power and character of Kilchoman's core range.
Nose: Opens with light, fruity notes influenced by our distillation. Being cask strngth, allows for intense waves of fresh green apple followed by candied tropical fruits. Lasting hints of dry, earthy peat smoke become the backbone for this release. Palate: Noticeably power at cask strength allowing for a concentrated palate combining citrus notes of lemon and orange peel. As the whisky opens it reveals a dominant honeycomb-sweetness that makes way for a profile driven by milk chocolate, provided by a Bourbon-rich maturation. Finish: A slight cracking black pepper spice combined with nutmeg. The oily, rich texture of this whisky delivers an increasingly smoky influence. Overall, a unique balance of heavily peated malt, slow distillation, and oak character. (Tasting Noted form Distillery)

Feis Ile 2023 single malt whisky is a vatting of 3 casks, two 10 year old bourbon barrels and one 11 year old sherry butt. This whisky distilled from Publican barley grown, malted and distilled at Kilchoman in 2011 and 2012, bottled at natural cask strength.
This special release specially celebrated the 2023 Feis Ile festival in Islay. Limited to 1159 bottles worldwide.

A limited release for 2022, the Kilchoman Casado (Portuguese for marriage) is matured in fresh bourbon barrels for 6 years before 38 casks were married together for 2 years in two 6,000 litre Portuguese red wine vats.
Nose: Smoke comes first and balanced with ripe stone fruits: peach, plum and cherry. Palate: Pepper and spice at first taste. Dry, salty peat smoke with apricot and lemon. Finish: Long finish with spices, the cooked fruit notes bring a sweet-jam balanced with Kilchoman smoke.
