Shochu is a distilled spirit and increasingly popular globally, similar to Sake.
This bottling is made by craft distiller Ookubo Shuzo in Kagoshima Japan and is their flagship bottling. It is made from baked sweet potato i.e. Yaki Imo and Black Rice Malt. Full bodied aroma of sweet potato, which also comes through on the palate. Very balanced and showcases the underlying ingredient of baked sweet potato perfectly with a delicate presence of dark chocolate in the finish. Awarded the HKIWSC Silver 2018, HKIWSC Silver 2019.

THE HACHI SHOCHU, Sweet Potato (Imo), Mizunara Cask Matured is a collaboration with Ookubo Shuzo, a family owned farm distillery in Kagoshima and Hacchan who, somewhere along the way was also exposed to Whisky and the benefits of Cask Maturation. Made from Grilled Kogane Sengan and Anno Imo, a fluffy delicious variety of sweet potato with a lovely aroma and golden skin colour (Yaki Imo), Kuro (Black) Koji and single distilled under normal atmospheric pressure (making it a Honkaku Shochu) to retain the flavors of the underlying ingredient, this Batch 5 has been matured for about 2 year and 7 months in Mizunara Oak to retain the flavour of the origin spirit while adding an extra dimension of complexity to the nose, palate and finish.
Mizunara Oak is unique to Japan and is infamously difficult to work with, given their grain structure which also makes it more prone to leakages but imparts very unique flavours that are not usually found in traditional bourbon and sherry barrels.
Color: Deep Gold Nose: Tropical fruits, incense, sandalwood, cedar and coconut with some subtle smoke balanced with sweet potato in the backgroud. Palate: Grated dry coconut, some banana and pineapple with a hint of oak spices, incense and sandalwood along with sweet potato flavours coming through at the back combined with subtle smoke.
Recommended way to Drink: Straight Up, On the Rocks or as a Highball (3 parts of sparkling water to 1 part The Hachi Shochu).

Color: Deep Gold Nose: Sweet caramel, butterscotch, fruit cake along with some cherries, raisins along with oak spices in the back. Palate: An initial sweetness of candied orange, hints of caramel and toffee balanced with oak spices, a hint of oak and again peach and lychee from the sweet potato shochu coming through at the back.
Recommended way to Drink: Straight Up, On the Rocks or as a Highball (3 parts of sparkling water to 1 part The Hachi Shochu).

This incredibly unique and fruity Shochu, very appropriately named after their Toji/Master Distiller – Mr. Nobuhisa Yasuda was first released in 2013. Using unique methods to make a 100% Imo Shochu using Sweet Potato ("Imo") as the main ingredient and Imo Koji - from Tsurunashigenji Imo, creates a more aromatic and fruity Shochu compared to the usual rice ("Kome") koji.
Sweet and rich aroma of fruits on the nose (some obvious lychee, hints of peach and perhaps some strawberries). Delicate, fruity, smooth and balanced while retaining the flavours of sweet potato on the palate with a warming finish, some dark chocolate bitterness and a very pleasant after taste. Chill the bottle and serve straight up or on the rocks. Pairs perfectly with a variety of food.

Satsuma "Masari" Imo (Sweet Potato) and Shiro Kome Koji (White Rice Yumetoiro from Kirishima) are fermented with "Kagoshima fragrance Yeast #1" to produce intense flavour compounds oils, esters and aroma. This mash is then vacuum distilled (in contrast to the usual atmospheric distillation) to preserve some of these clean and unique flavors. Isoamyl acetate is a component that leads to an aroma of banana and melon, and " Cool Mint Green " is characterized by showing a considerably higher value of this component than the normal Imo Shochu. This is the 3rd release in the "BIRD" series from Kokubu Shuzo after the Flamingo Orange and Cool Mint Green from the same distillery. The primary fermentation is made with Shiro Koji (Minamihikari rice from Kirishima) and "Kagoshima fragrance yeast No. 1", and the secondary fermentation is made with IMO or sweet potato (Satsumamasari from Kagoshima Prefecture) and Shiro Kome Koji (White Rice Koji). Palate: Initial sweetness with fresh mint, cream soda, cereals and spices likes cloves and cardamom with a hints of oak and dark chocolate at the back.

Using Kome (Rice) Koji and "Beni Haruka" breed of Sweet Potato which has been baked results is a richer and full bodied flavour. This is a limited edition release from the draft distillery. The Beni Haruka Imo (Sweet Potato) is a spindle shaped with a red purple skin and a yellow-white flesh. Its has a very moist texture and a refreshing sweet taste.

A limited edition release from the craft distillery in Kagoshima, this sweet potato shochu is made from Murasaki (Purple) Imo which usually contains a very high level of anthocyanin (which are rich in anti-oxidants). With a deep purple colored flesh, this ingredient definitely shines through in the Shochu with a very delicate sake/white wine like sweet aroma and palate.
