Dolin Dry Vermouth de Chambéry is a classic French dry vermouth known for its light, fresh, and clean profile. Produced in the Alpine region of Chambéry since 1821, Dolin Dry is made from a delicate Ugni Blanc wine base infused with more than 30 Alpine herbs, including absinthe, brooklime, verbena, and orange bark. The vermouth is famous for its subtle and complex aromas of bright citrus, menthol, piney herbs, almond, and balsamic notes.
The palate is crisp and elegant with a slightly sweet (≤ 4% sugar) and herbal character featuring flavors of lemon zest, green apple, white grape, thyme, sage, and white pepper. It finishes clean, medium-long, and slightly dry with soft nutty and chalky mineral undertones. Dolin Dry Vermouth holds France’s only protected designation of origin (Appellation d’Origine Contrôlée) for vermouth, awarded in 1932.
Dolin Dry is highly regarded by bartenders as a top-quality vermouth for classic cocktails like the Martini, Gibson, and Bamboo, and it is also enjoyed neat or on the rocks as a refreshing aperitif. It pairs well with seafood, goat cheese, olives, and can bring herbal depth to cooking, especially stocks, dressings, and sauces where ordinary white wine might fall short.
