Named after the famously dark, peaty loch overlooked by the distillery, our annual Loch Gorm limited edition is our only regular expression matured entirely in oloroso sherry casks.
For the 2023 Edition Anthony and Robin selected a total of 22 casks, 8 distilled in 2013, 6 distilled in 2014, and 8 distilled in 2015. Each cask was chosen for its unique flavour profile which, when combined together with the other 21 casks, create a beautiful balance of rich fruity character with layers of classic Kilchoman peat smoke and citrus sweetness.
Nose: Hints of cacao with an essence of leather, black cherry and light smoke. Palate: Roasted hazelnuts, dark chocolate and roasted dark fruits give way to light ashy peat smoke. Finish: Balanced and long with fresh Islay sea breeze. (Tasting Note from Distillery)

This whisky released in Jan 2023 has been distilled using a combination of their 3 pot stills and aged in re-charred American white oak ex-“Mellowed Kozuru” aged SHOCHU casks. Kanosuke Distillery is located on the picturesque shores of Fukiagehama beach in Kagoshima was established in 2017 and started its operations in 2018. The Whisky Distillery is owned by Komasa Jyozo, one of the Shochu producers in Japan and currently counts Diageo as one its shareholders (via Distill Ventures, Diageo's Drinks Accelerator).

The 100% Islay 13th Edition was distilled from 2012, 2013 and 2014 barley harvests before being matured for 44 bourbon barrels for a minimum of 8 years. This unique Single Farm Single Malt is the only whisky in Scotland to be produced entirely on one farm, from barley to bottle. The barley was then malted onsite and peated using local Islay peat before being distilled, matured and eventually bottled all within the farm distillery’s premises. Limited to 13,000 bottles. Awarded 95 Points at IWSC 2022 (Gold Medal Winner).
NOSE: Malt loaf, toffee apple, banana bread, citrus, lavender, pear drops, sea salt and hints of peat smoke. PALATE: Fresh vanilla and fragrant peat smoke with caramel, barley blossom, sultanas and hints of spicy oak tannins. FINISH: Silky viscosity with fresh crumpets, butter and honey. Following on the hugely popular Fino 1st release in 2020, this is the 2nd Fino Release of Kilchoman. From a total of 20 select Fino Sherry Butts, the Sherry butts were selected from Bodega Jose y Miguel Martin (Spain).
The Fino Sherry maturation works incredibly well with our classic Kilchoman character. The 2023 release elevates the fragrant green apple, stewed fruits and sweet citrus while allowing for the unmistakea- ble Kilchoman peat smoke to linger on the palate. Fino is another example of sherry casks working together, not against, our Kilchoman spirit. Limited to 15,650 bottles worldwide.
Nose: Elegant, dry peat smoke on the initial nosing, gradually opens to the unmistakable fruity character of Kilchoman. The distinct influence from the Fino Sherry casks provides dry, smoked oak which balances with the smoke found in the heavily peated Kilchoman malt. A lasting aroma of sweet butterscotch as the whisky begins to open. Palate: Honeycomb sweetness can be found immediately on the palate, gradually giving way to rich toffee and caramel. The Kilchoman spirit brings together candied fruits and the fresh citrus found in the distillation. Flaked almonds and a delicate peat smoke remain throughout. Finish: Long-lasting considered finish combining the malty spirit of Kilchoman, with the ripened citrus fruit profile provided by the Fino Sherry casks. Totara is the indigenous tree that built Aotearoa. From the arrival of Maori, the timber from this tree was used to build waka, homes, carvings, weapons and containers for storing food. After a full maturation in first fill bourbon casks, we have transferred the whisky to the totara barrels for a second maturation period.

The Sauternes Cask Matured 2024 Edition, the third limited release of this cask type was bottled at the end of May 2024. It’s been fully aged in ex-Sauternes wine casks for over 5 years and comes in at 50% ABV. To get just the right balance between the Sauternes cask influence and that classic Kilchoman character, founder and master blender Anthony Wills went with a good mix of second-fill Sauternes casks. He picked 22% first-fill and 78% second-fill casks from 2017 and 2018. Fun fact: most of the second-fill casks used were finishing casks from the 2018 release, resulting in a tasty blend of buttery sweetness, barbecued pineapple, candied ginger, and floral peat smoke.
Nose: Creamy, buttery notes with ripe fruits, a hint of salty sea air and subtle peat smoke. Palate: Butterscotch and floral notes combine with tropical and candied fruits with integrated peat smoke flowing throughout.
