This unique kentucky straight malt whiskey has a soft, sweet, nutty character. Unlike a typical 100% malt whiskey, this whiskey is crafted from 51% malt and aged in new charred oak barrels, making it similar to bourbon and provides a new experience for bourbon drinkers. Color: Warm Umber Nose: Soft nutty notes drizzled with light caramel and milk chocolate coat a layer of fruit character (apple, dried fruit, tropical fruit). Hints of brown spice, savory mint and brown sugar mingle with a rich note of freshly milled toasted oak Palate: Dark chocolate and caramel coated nuts are dried out with a dusting of cocoa powder and brown spice. A fruit medley brightens a trace of toasted coconut and rich, bright oak character. Finish:  Nutty and subtly sweet chocolate malt notes. Satsuma "Masari" Imo (Sweet Potato) and Shiro Kome Koji (White Rice Yumetoiro from Kirishima) are fermented with "Kagoshima fragrance Yeast #1" to produce intense flavour compounds oils, esters and aroma. This mash is then vacuum distilled (in contrast to the usual atmospheric distillation) to preserve some of these clean and unique flavors. Isoamyl acetate is a component that leads to an aroma of banana and melon, and " Cool Mint Green " is characterized by showing a considerably higher value of this component than the normal Imo Shochu. Distillation method: Vacuum distillation

This is the 3rd release in the "BIRD" series from Kokubu Shuzo after the Flamingo Orange and Cool Mint Green from the same distillery. The primary fermentation is made with Shiro Koji (Minamihikari rice from Kirishima) and "Kagoshima fragrance yeast No. 1", and the secondary fermentation is made with IMO or sweet potato (Satsumamasari from Kagoshima Prefecture) and Shiro Kome Koji (White Rice Koji). Delivers a very rich banana, cream and melon-like aroma. Distillation method: Vacuum distillation

Sharp and elegant taste with a gentle gin jo aroma. Lacking any distinct quirks thanks to being vacuum distilled, it is perfect match to Japanese cuisine. Stone fruit i.e., peach, salty and umami come through. It changes in the middle to more tropical fruity like banana. Hint of chocolate bitter at the finishing. Using Sake yeast and white koji for the fermentation. Under the low temperature, it enhances the aroma of the Shochu.

The Beni Haruka Imo (Sweet Potato) is a spindle shaped with a red purple skin and a yellow-white flesh. Its has a very moist texture and a refreshing sweet taste.

A limited edition release from the craft distillery in Kagoshima, this sweet potato shochu is made from Murasaki (Purple) Imo which usually contains a very high level of anthocyanin (which are rich in anti-oxidants). With a deep purple colored flesh, this ingredient definitely shines through in the Shochu with a very delicate sake/white wine like sweet aroma and palate.

A peated Glendronach is not something that you see often though we must emphasize that it comes across as gently or lightly peated. Initially matured in bourbon casks and then into Oloroso and Pedro Ximénez Sherry casks, this whisky leans more towards bourban cask flavors -  honey wax, malty, floral, spicy notes and subtle smoky elements. More earthy notes than the usual islay smoke or maritime saltiness while retaining the character of the Glendronach spirit.
