Craigellachie, one of the few remaining distilleries to use worm tub condensers produces a spirit with the usual meaty, heavier flavours. This 17 Year Old expression matured in is the first release of 2014 (Batch 98-ZC21) and has since become a part of the regular releases. Nose: Pear, apples with a creamy and buttery note, oak spices, a hint of smoke Palate: a strong start with a spicy, aromatic sweetness with tropical fruits and a creamy texture Finish: Smoky with a hint of pepper.

Matured in ex-bourbon casks for about ten years and further "finished" for about 24 months in a combination of American & European casks from 3 different Andalucian cooperages (Tevasa, Vasyma, Paez) bringing together the influence of a variety of Sherry including Oloroso and Pedro Ximénez. Nose: Caramelised orange, ginger and sultanas, laced with honey Palate: Dark chocolate and crushed almonds with a dusting of cinnamon Finish: Sweet mango, pannacotta and lemon sponge cake (Tasting Notes from the Producer)

The Kanosuke Whisky Distillery started operations in 2017 November, and released their first single malt Japanese Whisky in 2021. Kanosuke Distillery has three pot stills, while most distilleries of similar sizes over the world would have two. A unique aspect of maturation for the Kanosuke Distillery is the use the recharred ex-shochu casks for whisky aging as well. 
Today, Diageo also owns a minority stake in the Kanosuke Whisky Distillery.

Shinshu Mars distillery was opened at the high altitude of 798 meters in the small village of Miyata in Nagano prefecture in 1985. The humidity during summer is moderate and the water is of high quality, making the area an ideal location for whisky production.

In 1990, the Japanese economy stagnated and demand for whisky dropped dramatically. Mars, being a relativity young player in the field, halted production in 1992. By 2007, the whisky market started to recover and Shinshu Mars resumed production in 2011, after almost a two-decade hiatus.

Dolin Dry Vermouth de Chambéry is a classic French dry vermouth known for its light, fresh, and clean profile. Produced in the Alpine region of Chambéry since 1821, Dolin Dry is made from a delicate Ugni Blanc wine base infused with more than 30 Alpine herbs, including absinthe, brooklime, verbena, and orange bark. The vermouth is famous for its subtle and complex aromas of bright citrus, menthol, piney herbs, almond, and balsamic notes.

The palate is crisp and elegant with a slightly sweet (≤ 4% sugar) and herbal character featuring flavors of lemon zest, green apple, white grape, thyme, sage, and white pepper. It finishes clean, medium-long, and slightly dry with soft nutty and chalky mineral undertones. Dolin Dry Vermouth holds France’s only protected designation of origin (Appellation d’Origine Contrôlée) for vermouth, awarded in 1932.

Dolin Dry is highly regarded by bartenders as a top-quality vermouth for classic cocktails like the Martini, Gibson, and Bamboo, and it is also enjoyed neat or on the rocks as a refreshing aperitif. It pairs well with seafood, goat cheese, olives, and can bring herbal depth to cooking, especially stocks, dressings, and sauces where ordinary white wine might fall short.
