The tequila is produced traditionally by slow-roasting agave in brick ovens, fermenting with natural airborne yeast, and double pot-distilling at low temperatures. This method preserves the agave’s essence and results in a clean, lively spirit with notes of cooked agave, citrus, black pepper, earth, and grass. It offers versatility for sipping neat or mixing in quality cocktails.

Its flavor profile is described as intense agave with sweet fruitiness, pepper, and citrus nuances, and a long, smooth finish. It is produced by Carlos Camarena, a third generation tequilero, in partnership with Tomas Estes, emphasizing heritage, quality, and artisanal processing.

Siete Misterios Doba-Yej is crafted from Espadin agave, with "Doba-Yej" meaning Espadin in Zapotec. It's 100% natural and organic in origin, with flavors and aromas that are custom to the specific species of agave. This mezcal differs from Siete Misterios' other Espadin offerings, being the first made in a copper still instead of a clay pot. Its milling is done using a horse-drawn tahona, contrasting with the hand milling of their other mezcals. As of 2024, production occurs in Yautepec, Santiago Matatlán, or San Dionisio, Oaxaca, with labels showcasing a famous Mexican war hero that varies by production area. Some batches were also sourced from San Luis del Río, Oaxaca.

Dolin Dry Vermouth de Chambéry is a classic French dry vermouth known for its light, fresh, and clean profile. Produced in the Alpine region of Chambéry since 1821, Dolin Dry is made from a delicate Ugni Blanc wine base infused with more than 30 Alpine herbs, including absinthe, brooklime, verbena, and orange bark. The vermouth is famous for its subtle and complex aromas of bright citrus, menthol, piney herbs, almond, and balsamic notes.

The palate is crisp and elegant with a slightly sweet (≤ 4% sugar) and herbal character featuring flavors of lemon zest, green apple, white grape, thyme, sage, and white pepper. It finishes clean, medium-long, and slightly dry with soft nutty and chalky mineral undertones. Dolin Dry Vermouth holds France’s only protected designation of origin (Appellation d’Origine Contrôlée) for vermouth, awarded in 1932.

Dolin Dry is highly regarded by bartenders as a top-quality vermouth for classic cocktails like the Martini, Gibson, and Bamboo, and it is also enjoyed neat or on the rocks as a refreshing aperitif. It pairs well with seafood, goat cheese, olives, and can bring herbal depth to cooking, especially stocks, dressings, and sauces where ordinary white wine might fall short.
