Shochu is a distilled spirit and increasingly popular globally, similar to Sake.

This bottling is made by craft distiller Ookubo Shuzo in Kagoshima Japan and is their flagship bottling. It is made from baked sweet potato i.e. Yaki Imo and Black Rice Malt. Full bodied aroma of sweet potato, which also comes through on the palate. Very balanced and showcases the underlying ingredient of baked sweet potato perfectly with a delicate presence of dark chocolate in the finish. Awarded the HKIWSC Silver 2018, HKIWSC Silver 2019.

Slightly sweet, floral, crisp and delicately spicy palate with a deep umami aroma and a complexity that stays in the mouth for long. Yet it remains very gentle, easy to drink and can be enjoyed straight or on the rocks. We would also recommend Oyuwari (i.e. with hot water) which enhances the aroma and flavours. Pairs perfectly with fried fish and meat, spicy food but also with some sweet desserts.

A higher ABV (Bottled at 40%) Japanese Shochu made from ‘Koujuku-imo’, bursting with the fragrance of fresh lychee. Honkaku Imo Shochu DAIYAME 40 has a 40% ABV to expand its potential as a cocktail ingredient. With its rich flavor profile, powerful, full lychee-like aroma, and long finish, it is sure to inspire creativity in bartenders and mixologists everywhere.

Colour is transparent, clear, no sediments, perfumed, cassis leaves, on the nose has aromas like lime, yellow grapefruit, lychee. Palate, dry, lovely high concentration, grapefruit zest, cassis leafs, tomatoes leafs, lime, lychee as well, very fruity, intense, long on the palate. This Shochu surprises with the fresh aromas of exotic fruit, herbs and cassis and tomatoe leafs.
