余市

余市蒸溜所は、スコットランドで初めてウイスキー造りを極めた日本人、竹鶴政孝によって1934年に設立されました。政孝は、北方の気候と風土を重視していました。政孝が選んだ余市は海に近く、三方を山に囲まれ、スコットランドのハイランド地方に多くの点で類似していました。政孝は余市蒸溜所の建設にあたり、石炭を直火で焚くポットスチルを設置しました。この伝統的な石炭焚き蒸溜は、温度管理が難しく、熟練の職人が必要となるため、現在ではほとんど見られません。余市シングルモルトの特徴である、力強いコクと香ばしい焦げた風味は、この蒸溜所ならではのものです。

Nose: Peaty smoke, sweet malt, and subtle fruit, with hints of brine. Palate: Full-bodied with smoke and spice. Finish: Long and warming, with lingering smoke and sweetness.
