白州ウイスキー

南アルプスの麓、大自然と共存する広大な森の中に佇む白州蒸留所は、「山の森の蒸留所」として知られ、個性豊かなウイスキーを数多く生み出しています。

山崎蒸溜所とは全く異なるモルトウイスキーを造りたいと、サントリーのウイスキー職人たちは仕込み水を探し求め続けました。全国各地を探し回った末、たどり着いたのは、日本を代表する名水の一つ「白州」。日本初のモルトウイスキー蒸溜所誕生からちょうど半世紀後の1973年、サントリーは第二のモルトウイスキー蒸溜所「白州」を開設しました。この水で仕込んだウイスキーは、山崎の華やかで深みのある味わいとは一線を画す、心地よく柔らかな味わいを醸し出します。

Hakushu Distiller’s Reserve is a masterful blend of whiskies aged across the Hakushu range, resulting in a gently smoky dram infused with vibrant fruit nuances. This complex and deeply enjoyable whisky incorporates both lightly and heavily peated malts.

The 1981 Kioke Shikomi is regarded to be largely Hakushu (label states Pure Malt) and reportedly bottled in 2005. The name implies "matured in wooden tubs".  The distillation technique seems to have involved the direct fire method and bamboo charcoal filteration. Discontinued in 1999. No box available.

A limited release of 2021 and part of the Tsukuriwake selection, this Hakushu bottling has been matured in Spanish Oak. Only 300 bottles were made available in Japan followed by an undisclosed number for worldwide markets. Nose: Cacao, Manuka Honey, Dark Chocolate. Palate: Soft sweetness interlaced with a hint of drak chocolate bitterness. Finish: smooth and again some dark chocolate notes.
The Hakushu Spanish Oak were released in 2021. Hakushu Distillery's "Tsukuriwake" Selection.
