明石

1888年創業の江井ヶ島酒造（兵庫県明石市の漁村）は、1919年に日本初のウイスキー製造免許を取得し、現在も日本最古にして最小規模のウイスキーメーカーの一つです。江戸時代の酒造りにルーツを持つ江井ヶ島蒸留所（ホワイトオーク蒸留所とも呼ばれる）では、1960年代初頭に小型の銅製ポットスチルが設置され、本格的なウイスキー製造が開始されました。本格的なモルトウイスキー製造は、現在の銅製ポットスチルが稼働を開始した1984年まで続きました。
