Kurozake is a one of Akumochizake, which have a very long history. Given the Kurozake is not heated, the enzyme still active during the process, this give the Kurozake full of Amino acid (氨基酸) and Organic acid (有機酸) and minerals. It normally use for pretreatment of food for seasoning, wiping, cooking, etc. It is one of the favorite ingredient for Chef in Japan (Michelin-Starred)!
